When the tree gives you lemons, make limoncello

In my citrus saga post, I said I was making a recipe with the lemons from my tree.

Well, here's what a harvest from my fruitful little tree turned into!

With so many lemons on the tree at once, I wanted to make something that would store well long-term and use every part of the lemon (I also saved the lemon juice in the freezer for more recipes).

To make it, I peeled 23 lemons and let the peels (without the pith) soak in 1.75 liters of vodka for about five weeks. Then I strained the peels out, made a simple syrup and combined that with the lemon-vodka infusion, and let sit in the refrigerator for about another month.

It's delicious! Sweet, lemony, and refreshing for a summer night.
